cheesy potato cups


makes 4 servings
4 (6 ounce) bakng potatoes, pierced with fork
1/3 cup milk
1 tablespoon butter
1/4 teaspoon butter
2 ounces American Cheese, cut into 8 cubes
8 fresh broccoli florets
1. place potatoes in microwave; cook on HIGH 10 minutes. Slice potatoes in half crosswise. Cut small slice from round ends of each potato slice (this lets them sit upright on the plate).
2. Hold potatoes with clean kitchen towel and scoop out the centers into medium bowl. Mash potatoes in bowl with fork until fluffy. Add milk, butter, and salt; beat with electric mixer on medium speed until blended. Do not overmix.
3. Divide mixture evenly amoung 8 potato shells and arrange in microwaveable dish. Top each shell with cheese cube and broccoli floret. Place in microwave and cook HIGH 2 minutes or until cheese melts.

super simple ranch potatoes

makes 4 - 6 servings
2 pounds small red potatoes, quartered
1/4 cup vegetable oil
1 packet (1 ounce) HIDDEN VALLEY The Original Ranch Salad Dressing & Seasoning Mix
place potatoes in a resealable plastic bag and add oil; seal bag. Toss to coat. Add salad dressing & seasoning mix and toss again until coated. Bake in an ungreased baking pan at 450 F for 35 minutes or until potatoes are brown and crisp.
these are so good and super easy to make make them as a side or a breakfast. I made them with spam and egg easy and filling.
