pizza sandwhich

makes 4 - 6 servings

1 loaf (12 oz) focaccia
1/2 cup prepared pizza sauce
20 slices of pepperoni
8 slices (1 ounce each) mozzerela cheese
1 can (2 1/4 ounces) sliced mushrooms, trained
red pepper flakes (optional)
olive oil
1. place focaccia on cutting board; cut in half horizontally. Spread cut slices of both halves wth pizza sauce. Layer bottom half with pepperoni, cheese and mushrooms; sprinkle with red pepper flakes, if desired. Close sandwhich with top half of bread. Brush outsides of sandwhich lightly with olive oil.
2. Heat large nonstick skillet over medium heat until hot. Add sandwhich, press down lightly with spatula or weigh down with small plate. Cook sandwhich 4 to 5 min per side or until cheese melts an sandwhic is golden brown. Cut into wedges and serve.
HINT: Focaccia can be found in the bakery section of the most supermarkets. It is often available in different flavors, such as tomato, herb, cheese or onion.
